The Basics
Graham did his apprentice at the United service hotel but grew up under Leon Langley’s tutor ledge. Leon was a true mentor for Graham his honesty with food would have a long lasting effect on Graham. Leon would use what was best locally. He would go out to the orchards, he would go outside in the markets in the country before markets became fashionable. He would go and source product from interesting purveyors. Everyday Leon and Graham would just get everything out of the fridges, see what they had, pour over books and recipes and then come up with. The restaurant served relatively affordable cheaper food so they didn’t use expensive ingredients, they just couldn't’t afford too. This was a real inspiration and followed Graham into his own restaurant, the critically acclaimed Scarbrough Fare. and has followed him through out his forty year career in food.
